It is difficult, but using a website I became easier. I like myfitnesspal, commonly used to lose weight, but tracking the food is very simple! There is an application as well so you can have it on your phone, and let's face it, we would be lost without our phones! So, you will not be left at home!

I do not keep a food journal. I tried at first, but as long as you know you are eating healthy and take your vitamins I do not see the need for a food journal.
I've been trying to keep a journal of what I eat / drink and when I exercise. I have found that when I had to go to the bottom right, I am more likely to make healthy food choices and exercise. This was despite the difficult!
